Chile Con Carne: a History

Posted under: Chihuahua Articles

It’s simple really. Peppers with meat in a spicy stew with tomatoes, onions, beans and other ingredients in as many variations as the mind can muster. From Baja to Cincinnati right through the heart of Texas, where it’s the official state dish, chile con carne, or chili for short, is among the most famous indigenous American foods.

Some say that chili was invented in Mexico during the 1840′s, possibly in Chihuahua, as a complimentary dish served at cantinas for outsiders, who wanted something spicy and cheap. Others contend it was born in Ensenada, Mexico in the 1880′s as a way of stretching available meat in the kitchens of poor Tejanos. Many Texans maintain that it was the invention of Texas cowhands who ate it by the bucketful as the drove their herds across the plains. The most imaginative origin traces its roots back to pre-Columbian Aztec chefs.

What is known for a fact is that in the 1880′s, colorfully-dressed Hispanic women called “Chili Queens” began to operate around Military Plaza and other high traffic public places in downtown San Antonio, Texas, where they would reheat cast iron pots of pre-cooked chili and sell it by the bowl.

Sanitation laws in the late 30′s shut down the Chili Queens, but not the public appetite for this tasty Western dish. Chili parlors opened by hundreds. These small, family-run chili joints spread from Texas to the rest of the USA, and became a part of the pre-WWII American landscape. Even today hardly any American who claims to be able to cook doesn’t have their very own secrete recipe for chili, whether it be hot, sweet, thick, soupy or just plain odd.

Regional variations add a certain level of enjoyment for chili lovers. Traditional Texas style chili is thick and uses few to no vegetables. New Mexico chili is famed for it’s thinner consistency and the use of green rather than red chili peppers. In the chili in Cincinnati, Ohio has a sauce like quality and is used as a condiment or topping for hotdogs or spaghetti. White chili uses no tomato and relies on beans. Vegetarian chili (chile sin carne) is, of course, meatless. Health conscious chili ditches the suet and substitutes white button mushrooms for beans to lower the calories. In fact, chili is such a malleable dish that it can be hard to define. Still, most people know it when they taste it, and are all to happy to do so.

Toy Fox Terrier Dog Breed Description, History, Grooming, Health Issues and Living Conditions

Posted under: Chihuahua Articles

Description: In America the Toy Fox Terrier is called Amertoy or Toy Terrier. This breed has a domed skull and a small muzzle. The eyes are dark in colour and round in shape. The nose is black, in most dogs, except in the chocolate coated dogs. This dog has V shaped ears that are erect. The dog stands at 10 inches and their weight is 3½-7 pounds. This breed is in the terrier group. The tail is docked, in countries that permit docking. The coat is short and thick and is tri-coloured with white being the main colour, and you can then see black and tan or tan. Other colours do sometimes pop up but may not be accepted by some show standards.

History: The Toy Fox Terrier was developed in America in the 1930′s. As with a lot of the Terrier family it was first used as a working dog to hunt rats and mice for the farmers. This breed is a descendent from the Smooth Fox Terrier, which was crossed with toy breeds such as the Miniature Pinscher, Italian Greyhound, Chihuahua, and the Manchester Terrier. This was done to miniaturize the dog, to the dog we see today called the Toy Fox Terrier. There is another group that believes the Toy Fox Terrier has only come from the Smooth Fox Terrier by selective breeding of the smallest Smooth Fox Terrier to miniaturize this line of dog and that no other dog breeds were used. The Toy Fox Terrier was recognized by the UKC in 1936 and then by the AKC in 2000.

Temperament: This may be a small dog but is very robust, as are most of the Terrier family. This is a hardy dog that is intelligent curious and active staying active all its life. This dog is loyal, loving, and is sensitive. This is a dog that has high levels of energy, and is inquisitive. This breed has got all the Terrier qualities and will still hunt and kill mice and rats, so small pets such as rats and rabbits are not a good idea with this breed. The Toy Fox Terrier is small but will still need a firm consistent leader to meet its natural balance and to bring out the best in the breed. Small Dog Syndrome is not good and this breed, if they think they are the pack leader, will become yappy and over demanding. This dog is great to train and with its sharp intelligent brain learns quickly. The Toy Fox Terrier is used for assisting the disabled and can work well for hard of hearing and other disabled groups, around the home. This dog is good with children providing the child understands to be a small leader. The dog will stay puppy like all its life which is about 13-14 years.

Health issues: While, over all, this is a good healthy breed of dog there are lines that can get stifle or Legg calve Perthes a syndrome, that is of the hip joint and is degenerative, both of which can be seen in the Toy breeds. Diet is important with this breed as allergies to corn, beet pulp, and wheat can develop.

Grooming: The Toy Fox Terrier is easy to keep smart and clean all that is needed is brushing the coat occasionally. This breed is a light shedder.

Living conditions: The Toy Fox Terrier is good for apartment living and is happy and active in an apartment, not needing a garden. This dog will still need good daily walks as it is an active breed and so needs to release a lot of energy and fulfil its need to have a great look around and explore.

History Of Durango City

Posted under: Chihuahua Articles

Durango is the fourth largest state in Mexico. The name Durango is Basque in origin and means Fertile lowland bathed by rivers surrounded by elevations or mountains. This describes the topography of this state quite well. The western half of the state is dominated by the Sierra Madre Occidental mountain range. Eastern Durango is mostly semiarid plains. The northeastern corner of the state that borders the state of Coahuila is an area known as the Laguna District. This fertile region is made up of vast desert basins irrigated by the Nazas River.

Durango, a destination that has served as an important filming location, lies in Mexico northwest region, 268 km southwest of Torreon, Coahuila, and 310 km northwest of the city of Zacatecas. The climate is mostly dry, with rainfall in the summer. The average year round temperature is 18 degrees or 64 Fahrenheit.

In this city you will see some of the northern region most unique architecture, such as that of Durango Cathedral, the Templo de Santa Ana and the Casa del Conde del Valle de Suchil. The diverse designs offer a precious mosaic of colonial and contemporary architecture. Other edifices, such as the Casa de Gobierno, house museums with amazing art exhibits, old furniture, archaeological pieces, religious art, historical archives and collections that reflect the artistic talent of the region ethnic groups.

In Durango surrounding areas you can do various outdoor recreational activities, including fishing trips at the Guadalupe Victoria Dam, camping outings at El Saltito waterfall and mountain biking excursions at Chupaderos. The latter has gorgeous settings that have been used as film location sites. You also can explore the vast Zona del Silencio Zone of Silence, a mysterious region where you can observe singular plant and animal species.

The state of Durango was first colonized in 1562 by Francisco de Ibarra. Early European settlers met strong resistance from the native populations, but the wealth of mineral resources and grazing lands continued to attract colonists. The region which is made up of modern day Durango and the state of Chihuahua was known as Nueva Viscaya, with the city of Durango acting as the capital for this colonial province.

Durango is a leading producer of ferrous metals such as iron, copper, silver and gold. The mountains of this state are extremely rich in minerals. Lumbering, ranching and farming are other occupations for the majority of residents in Durango. Cotton is the chief crop in the Nazas Valley, with wheat, sugarcane, tobacco, corn and other vegetables grown there as well.
